This recipe is for incredibly delicious, healthy vegan treats that will reward your senses, bring bliss to your palate and your entire being. The combination of peanut butter with coconut tahini and chocolate is a "match made in heaven"! The texture is melt-in-your-mouth, and the only thing that will slow down the disappearance of these candies, once you bite into them, is the pleasant crunch from the fluffy popped quinoa and amaranth, with which you should play a little before you get to the moment of swallowing this perfection!

    Ingredients for Protein Balls with Popped Quinoa and Amaranth
    *for the filling:
     
  • 1/2 cup peanut butter
  • 1/4 cup coconut cream
  • 1/4 cup agave syrup Dragon Superfoods
  • 2 tbsp Supermix protein Dragon Superfoods
  • pinch of salt
  • 1/4 tsp vanilla essence
  • 2 tbsp almond milk
  • 1/2 cup popped quinoa Bioklasa
  • 1/2 cup popped amaranth Bioklasa

    *for the glaze:
     
  • 1/2 cup chocolate drops Dragon Superfoods "Milky"
  • 1/2 cup chocolate drops Dragon Superfoods "White"
  • 4 tbsp almond milk

Instructions for preparing Protein Balls with Popped Quinoa and Amaranth
Mix all ingredients for the filling in a medium bowl, then form walnut-sized balls with your hands. Place them in the freezer for 10-15 minutes while the glaze is being prepared.

For the glaze, you can use any chocolate you like. Melt about ½ cup of each type + 2 tbsp almond milk in a double boiler or microwave.

Once the chocolate cools down and tempers, remove the chilled candies from the freezer and start dipping them one by one in the chocolate, then place them on a tray lined with baking paper. You can also use toothpicks to make it easier to dip and remove them.

Place the finished chocolate candies in the refrigerator for at least 30 minutes until the chocolate hardens, after which they are ready for consumption. You can freeze them or store them in the refrigerator for up to a week.
