Ingredients:
For the crust:
- 2 packets of tea biscuits
- 100 g butter
For the cream: - 3 eggs
- 400 g cream cheese
- 1 lemon
- 5 tbsp sugar

Method of preparation:
Grind the biscuits, mix them with the melted butter, and stir well. Cover the bottom and sides of a springform pan with the mixture. Place the pan in the refrigerator to let the crust firm up. Meanwhile, prepare the cream by beating the cream cheese, adding the sugar, finely grated lemon zest, and lemon juice. Add the eggs one by one, stirring.
Pour the cream over the firm crust and place it in a preheated oven at 160 degrees Celsius. Bake for 60 minutes. After baking, do not remove the cheesecake from the oven immediately, but leave it for an hour with the oven door closed and another hour with it slightly open. Only then remove the dessert and leave it in the refrigerator until it is completely cooled. After a few hours, you can remove it from the mold and spread it with jam.
Keep in mind that the cheesecake is dense at the edges and jelly-like in the center.
Of course, we tried the recipe as soon as we received it from Zhana, adding our own touch – something caramel and crunchy to enrich the delicate texture. We broke up a bett’r sesame brittle, leaving some larger pieces, and mixed it into the crust mixture. It turned out to be an even more wonderful cheesecake, and we recommend you try this slightly modified version.
