This cake is an excellent way to use up fruits that are already overripe and not as pleasant to eat raw, but become sweet and fragrant after baking. In combination with cinnamon and fresh walnuts, it makes an incredible autumn dessert for those gloomy and chilly days when all you crave is something sweet and soul-warming. Plus, it has no sugar, but it does have a little chocolate. Isn't that wonderful!

Ingredients for Oatmeal cake with fruits, walnuts and cinnamon
  • 2 tbsp crushed flaxseed Bio Klasa
  • 6 tbsp water
  • ¼ cup coconut oil
  • ½ cup oat milk
  • 2 cups (160 g) organic fine rolled oats Bio Klasa
  • 1 medium apple, coarsely grated
  • 1 medium pear, coarsely grated
  • 1 banana, sliced thinly
  • ¼ cup peanut butter
  • 1 tsp baking powder
  • ½ cup crushed walnuts
  • 1 tsp organic cinnamon Bio Klasa
  • 40 g organic cocoa paste Dragon Superfoods
  • 2 tbsp coconut cream substitute The Bridge
  • 2 tbsp honey or maple syrup optional for sweetening

Method of preparation for Oatmeal cake with fruits, walnuts and cinnamon: Preheat the oven to 200 degrees Celsius.

Soak the flaxseed in water and let it sit for a few minutes. This is the plant-based alternative to eggs for baked goods, providing not only an excellent binder for the ingredients but also beneficial nutrients, fats, and fiber.

Add the coconut oil, peanut butter, and oat milk to the flaxseed and mix well with a fork.

Add the rolled oats and baking powder and mix again.

Next, add the apple, pear, cinnamon, and walnuts.

Once everything is well mixed, pour the mixture into a rectangular baking dish lined with baking paper. Spread it out evenly and smooth with a spoon.

Arrange the banana slices on top and sprinkle with a little more walnuts.

Bake for 15 minutes or until the cake is set.

Remove it from the oven and, while it cools, prepare the chocolate.

Melt the cocoa paste in a double boiler, add the plant-based cream and the sweetener of choice. Stir constantly to help the ingredients combine quickly.

When everything is well mixed, remove it from the heat. If we delay, it can curdle and become lumpy, so we must be careful.

Spread the chocolate over the cake, sprinkle with a little more walnuts on top (I just can't get enough of them).

The result is a moist and delicious gluten-free cake, the fruits provide excellent sweetness, the walnuts and cinnamon perfectly harmonize the aroma, and the delicate chocolate caresses the palate with every bite.
