Palm sugar dissolves, melts, and tastes almost like white sugar, but it is unrefined. It is extracted from the blossoms of coconut palms by carefully collecting the flower nectar. This nectar is then dried naturally, forming brown crystals – rich in vitamins and minerals, including potassium, zinc, iron, and vitamins B₁, B₂, B₃, and B_6.

Palm sugar contains calories like any carbohydrate, but at the same time, it has a low glycemic index. This means that these calories are absorbed into the bloodstream at a slower rate compared to calories from refined sugar. Therefore, it is suitable for people with problematic blood sugar, which rises sharply when consuming white sugar or other sweeteners.

The glycemic index of palm sugar is 35. For comparison, that of honey is between 55 and 60, and for white sugar, it is 105. With this index, it is similar to milk and boiled carrots, yet it has a unique, slightly caramel taste.

Palm sugar can be used for sweetening and caramelizing, just like ordinary white sugar.
