Honeydew honey is obtained from the sweet, colorless sap "honeydew" on coniferous and deciduous trees. The period during which bees collect honeydew is about two months and starts in mid-summer, when there is no more nectar.

Honeydew honey is dark in color, with medium sweetness, a specific aroma, and a thick consistency. It is exceptionally rich in minerals, amino acids, and oligosaccharides compared to other types of honey.

The specific humidity, as well as the characteristics of the climate and soils, contribute to Bulgarian honeydew honey being considered one of the highest quality and purest in the world.
